I was in a pinch for some muffins and craving pumpkin pancakes so I went into the kitchen to experiment. They turned out pretty great, I’m just waiting for my official taste tester to come home to give the final word!
1 Cup Trader Joe’s Pumpkin Pancake Mix
1 Cup Oatmeal
2 Tablespoons Ground Flax Seed
1/2 Cup Hemp Milk
2 Tablespoons Canola Oil
1/4 Cup Brown Sugar
Wisk egg, milk, brown sugar and canola oil together. Add pumpkin mix, oatmeal and flax. Whisk until mixed and place in muffin tins. Bake at 350 for 20-25 minutes. Makes 6-8 muffins.
