Perfect Fall Treat: Peanut Butter Pumkin Brownies

When a friend tweeted the link to these brownies I knew I had to try them. I love anything pumpkin and my husband loves anything peanut butter. We made these together on a Sunday afternoon, very quick and easy.

Here’s one thing I would have done different: I wanted to add some flax seed for some extra nutrients/health benefits. In the excitement of baking these with my husband I totally forgot to try that. Will try it on the next round. If you try it before I do, let me know what you think.

These would be perfect for a fall party or Thanksgiving weekend desert. It’s so light and cake-like that it seems like a healthy treat.

Here are the list of ingredients. Check out the link for full recipe.

2 cups AP Flour
1 tsp Baking Powder
1/2 tsp Salt
1/2 cup Brown Sugar
1 cup Sugar
4 Eggs
1 TBS Vanilla
8 TBS Butter
6 oz Chocolate, semi sweet or milk chocolate
1 1/4 cup Pumpkin
1/4 cup Vegetable Oil
1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/4 cup Peanut Butter
Chocolate Chips, optional

Peanut Butter Pumpkin Brownies

Enjoy!

Sorry for the crummy BlackBerry picture. Didn’t think to take a nice glamor shot 😉
